
The most common way I have had curtido is as a side dish to Pupusas. Both yummy and the curtido offers a strange yet surprisingly fresh taste to the pupusas.
All you need is:
1 Small cabbage – shredded
3 large carrots – -shredded
1 Large Yellow Onion – thinly sliced
3 Cups of hot water
1 1/2 Cups of Cider Vinegar
1 tbs Oregano
1 tbs Red Chili flakes
1/2 c. Vinegar
1 tbs. Salt
Combine in a large bowl Cabbage, Carrots and Onion. Pour 2 1/2 Cups of Hot water and let it rest for about 10 minutes. Then, rinse out the water. Mix the 1/2 cup of Hot water, add the Oregano, Red Chili flakes, salt and vinegar. You can use a fork to mix it then pour over the mixture of cabbage, carrots and onion.
Let is sit in the refrigerator for a few hours and serve with a pupusas or any of your other favorite dishes.
